
avacados are ONE dollar!!! yes, that is right!! one dollar! i almost feel like i am at the haymarket in boston again.
so with that little trip i decided to host a little nachos with nacho libre gathering. we enjoyed nachos, guacamole, mexican sodas and thanks to my mexican patient at work- authentic chicken enchilladas.
it would be wrong of me to not share this recipe with you... here goes:
- 1 can of las palmas green enchillada sauce
- monterey jack cheese (one big block)
- small corn tortillas
- chicken (i think i used about 3 breasts for one pan??)
- tomatos
- onions
- chili tapateo sauce
so first... you can begin by shredding cheese and start boiling chicken

chop tomatoes and 1/2 an onion and fry in pan with little bit of oil and garlic.
spray a glass baking dish with pam and then cover with a layer of shredded monterey jack cheese; take the boiled chicken and peel into pieces and add to tomatoes and onion; you can also add tapateo chili sauce if you like it hot; you can fry your tortillas a little bit to get warm; you put the chicken mixture in the tortillas and roll/wrap and lay on top of cheese layer in baking dish;
drizzle the las palmas sauce and add then stick in the oven for 30 min at 350F... i realized i forgot the cheese at about 15min in, but it worked out ok as i just added the cheese for the final 15min.
