i LOVE salads... so much so that i bring one EVERY day to work, i swear (well not tomorrow since i used up all my greens for THIS awesome salad... so tomato soup it is). thus, i needed to expand and try a new salad with two, no three of my favorite ingredients: grapefruit, avacado and LIME!!!

for the lime vinaigrette:
the salad:

- 1/4 c. freshly squeezed lime juice
- 1 tbsp. liquid honey
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dry mustard
- 2 tbsp or 1/4 c. splenda/sugar (the original recipe calls for 1/4 c. sugar- i felt like that was TOO much, so next time i will try for just 2 tbsp and i might try splenda to cut the sugar/cals)
- 1/4-1/2 c. vegetable oil (the original recipe calls for 1/2 c. - also a lot.. your call)
- salt and pepper freshly ground
the salad:
- 1 head red leaf lettuce or 10 c. mixed greens
- 1-2 avacados (depending on your love, original recipe calls for 2)
- 1-2 large red grapefruit(s) (depending on your love, original recipe calls for 1) peeled and pith removed, sliced crosswise into 1/4" pieces
the from the best of bridge cook book says it goes nice with fish/fowl... lucky for us, we had salmon! ENJOY!
